Honey-Orange-Spiced Yams

This recipe is simple and absolutely delicious as a Thanksgiving side dish. To make it even better I substituted three tablespoons of honey instead of one-half cup dark brown sugar. 

Ingredients
2 lbs yams, peeled and diced
3 tablespoons honey 
1/2 cup (1 stick) butter, diced
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon grated orange peel
1/3 cup fresh orange juice
¼ teaspoon salt
1 teaspoon vanilla
chopped toasted pecans (optional)


Direction
1. Place yams, honey, butter, cinnamon, nutmeg, grated orange peel, orange juice, salt, and vanilla in a crockpot. Cover; cook on high 4 hours, or until potatoes are tender.

2. Sprinkle with toasted pecans before serving, if desired.

Note: Just add more honey if you want this recipe sweeter.
